Check spectrogram / 3d plot layer gains for various normalisations

Description
Need to check that the default gain levels are (a) consistent with older versions of SV and session files saved from them and (b) consistent when built into Tony with older versions of that app and its session files.
And also (c) that they look nice as defaults.
